Bay Leaves

Directions

Caramelize the onion over low heat in the butter. Add the garlic, celery, carrot and thyme. Cook 5 minutes over low heat.

Add the vegetable stock, Bay leaves, Madeira and the hot water. Add the ham hock. Bring to a boil then reduce to a simmer. Cook over low heat for 3 hours. Remove from heat and cool.

Place over low heat and warm for 1 hour. Remove the meat from the ham hock and return the meat to the pot. Remove the Bay leaves.

This soup is best after it has cooled and then re-heated.
